This project was a community needs assessment to determine the prevalence of obesity and health-related complications among women aged 18 to 44 receiving WIC benefits.

Advanced Community Nutrition II
Based on the community needs assessment results and the staggering statistics found during Advanced Community Nutrition I, a diabetes prevention program was identified as an area for educational opportunity. This project was to create an evaluation and data management plan to evaluate the diabetes prevention program.

Maternal and Infant Nutrition
This paper evaluated obesity during pregnancy and the increase in maternal and infant risk for complications and disease.

Experimental and Functional Food Science
This paper aimed to identify and discuss the effects of probiotics on older adults with mild to moderate cognitive impairment.
